Following a long and successful career in the Roman dining scene, brothers Gastone and Franco Pierini opened Moma. It serves breakfast and lunch, and at dinner it turns into an upscale experience in the hands of young chef Andrea Pasqualucci. The cuisine is international in style, though dishes such as cuttlefish tagliatelle in puttanesca evoke the region’s cuisine. There is also a reliance on the wild herbs of Lazio, such as lovage served with cod, seasonal mushrooms and Bernaise sauce or aniseed paired with rigatoni, sheep-milk blue cheese, beetroot and black garlic.
