Relying on exceptional regional produce sourced from small farmers across Anatolia, he honors Turkey’s rich culinary heritage in dishes like marinated bonito with ‘pepper dolmade’ cream, bottarga, vine leaf and sourdough crisp and slow-cooked lamb shoulder, mom’s meatball in lavash, ‘üveyik’ wheat with leek and apple and charred vegetable salad. An outstanding selection of Turkish wines, warm and sweeping views over the Golden Horn complete the experience.
