After spending seven years working as the head chef at Mugaritz, Miguel Caño returned to the family business. One might expect to find an Avant-garde cuisine, he opted for a more natural approach that focuses on the superb ingredients that come an área that spans the Atlantic Coast to the Navarre. Set in a palatial 16th century house off the main square of Haro, given the location in the heart of La Rioja, it’s no surprise that Rodrigo Manuel has organized a magnificent cellar.
