When, in the year 2000, the mad cow crisis prompted the European Union to ban Fiorentina steak, butcher Dario Cecchini was on the front lines, working to bring the breed back to restaurant tables. When the ban was lifted in 2006, Cecchini began serving beef that was grass-fed in both Spain and Tuscany and served it in a traditional Tuscan style without extreme aging, becoming an international culinary star in the process. The wine list is sparse, which the restaurant compensates for by offering a BYOB policy with no corkage fee.
