At the Öschberghof resort in Donaueschingen, chef Manuel Ulrich has led the kitchen since the restaurant opened in 2018. His modern French haute cuisine features dishes such as Gillardeau oysters with Imperial oscietra caviar, glazed black salsify and nasturtium, duck foie gras with red cabbage, cassis and pistachio and cod with sea urchin, cucumber, yuzu and coriander. The sleek, modern dining room offers understated luxury. The wine list is international, with German Rieslings, Burgundy, Bordeaux, and Champagne.
