Founded in 1916 and still managed by the Regoli family, Pasticceria Regoli is a Roman institution. Regoli is celebrated for its state-of-the-art maritozzo: a traditional loaf of rich bread (made with butter, milk and eggs in addition to flour) cut in half and filled to the brim with whipped cream. Maritozzi have been having a moment – they’re popping up across Italy, sometimes in unconvincing savory versions – but Regoli is a great benchmark for what this humble sweet, once made by country girls looking for a husband, or marito, should really be about.
