While fourth-generation pizzaiolo Ciro Oliva, born in 1992, has been getting a lot of attention for his fresh take on pizza, he has also been getting a little bit of heat as well. In Naples, pizza is considered cheap street food, and Oliva’s 12-course tasting menu is regarded as borderline heretical. If you can resist passing judgment, you will find that his pizzas are outstanding and the price more than fair, even though he handpicks the best ingredients from Campania, such as sausage with pork from Caserta, broccoli and provola di bufala (smoked buffalo mozzarella).
