Racines, located in the Passage des Panoramas, was created by Pierre Jancou who put the intimate restaurant on the map by being the first neo-bistro to exclusively serve natural wines. Jancou departed in 2014 and after a downward period, the Sardinian born chef, Simone Tondo, created the bistrattoria, serving his grandmother Marisa’s recipes.: vitello tonato, beef cheek pasta and veal Milanese with argula and lemon. Wines are still natural-driven, with French and Italian producers featured, especially from Burgundy, Barolo, and the Loire.
