Rico’s Cosi
Zürich, Switzerland
This renowned restaurant, set in a former art gallery built in 1873, was formerly known as Petermann’s Kunstuben, run by the legendary Horst Petermann. In 2011 he passed the reins to his protégé, Rico Zandonella, who runs the restaurant to this day. The menu includes foie gras of goose with oxtail, cranberry and chocolate brioche, lightly smoked monkfish with aubergine caviar and paprika-orange emulsion and veal sweetbreads with veal raviolo on a leek fonduta. The wine list is extensive, focusing on Burgundy, Bordeaux, and Swiss Pinot Noir.
