Rogan & Co

With Tom Barnes’ promotion to executive chef of Simon Rogan’s northwest restaurants, Liam Fitzpatrick has stepped into the head chef’s shoes at Rogan & Co., Rogan’s third Cartmel restaurant (the others being L’Enclume and R&D kitchen Aulis). Its brief is to interpret the Cumbrian terroir but through a comfort food lens. Good examples might be crumpet with Old Spot pork terrine and apple or dry-aged Dexter short rib, horseradish glazed kale and whey onion. One to work into a Lake District itinerary.
