Roma Sparita
Rome, Italy
The long tradition of Roman food – born out of the kitchen scraps of popes and kings – is alive and well at this quaint trattoria in the heart of Trastevere, where patrons happily tuck into dishes like puntarelle (a type of chicory, eaten raw in a salad with anchovies and garlic), tonnarelli cacio e pepe, supplì al telefono, so named because, when the deep-fried rice balls are opened, the melting cheese creates a string, resembling an old landline phone. A lovely place to restore oneself after spending an exhausting day touring the city’s amazing sites.
