This restaurant, founded in Madrid by the late chef Santi Santamaría, has been run by Óscar Velasco since 2011. Its hallmarks from the outset have been tradition, respect for the environment and an eternal search for the best ingredients. Velasco's cuisine is based on seasonal products and employs an approach that can be described as academic but is always looking to the future. You can taste the cuisine both à la carte or in the various menus. The highly efficient service, led by Abel Valverde, is nearly invisible; the cellar is run by David Robledo, who has amassed an excellent wine list featuring hundreds of vintages.
