Replacing Harald Wolfhart, who spent 37 years in charge of the kitchen at this luxury hotel in the Black Forest, was no easy task. But Torsten Michel rose to the challenge and serves some of the best modern haute cuisine in Germany. Signature dishes include Gillardeau oysters with caviar and champagne sauce, Ikejime lacquered Sea Bass with crispy skin, pearlescent jus, sea buckthorn and maple syrup and braised lamb served with a Rouennaise sauce. The wine list is among Europe’s finest showcasing Burgundy, Bordeaux, Champagne, and German Rieslings.
