The lazy, sun-kissed resort town of Senigallia has become a sort of Copenhagen by the sea for its impressive concentration of great restaurants in a small area. Chef Niko Pizzimenti’s restaurant pays tribute to his father, a Sicilian-born fisherman, in dishes such as octopus with macco di fave (a broad-bean purée) and bitter almonds or angel-hair pasta with sour butter, hare from Pantelleria and glazed eel. But there’s always an outstanding tempura on the menu; Pizzimenti perfected the technique while working at Nobu in Australia.
