The veteran chef, who witnessed the invention of modern British cooking firsthand (at Robert Carrier’s, The Capital Hotel, etc.) and made his own contribution at Ludlow’s Merchant House, knows when to let well enough alone. His personality is stamped all over the menu and wine list.
