Raue offers clever takes on classic dishes, along with creations of his own, like his signature wasabi langoustine, deep-fried langoustine marinated with wasabi mayonnaise and served with green rice, a fish sauce stock, and accents of mango, carrots, and coriander, pike-perch sautéed in aged soy auce, leek and ginger and his interpretation of Peking Duck. The wine list offers German Rieslings, Burgundy, and Champagne, complemented by sake.
