Maurizio Albarello and his sisters Paola and Stefaniaoffer traditional cuisine without any compromises. They cure their own sausages in-house, the tajarin is among the best in the region, the insalata russa might be the best you will ever taste, and in truffle season you can enjoy a 4-course menu for 35 euros (plus the truffles.) The wine list is concise, with a large selection by the glass offered on the daily blackboard.
