Tucked away at the end of a winding road in the countryside of Brescia, Michele Valotti is a master of fermentation and foraging – influenced not by New Nordic cuisine but rather by the agricultural wisdom of the land. Don’t expect traditional dishes, in the style of a trattoria, but rather one of the cheapest and most interesting tasting menus in Italy, with offerings such as risotto with hazelnut, fennel, lovage or spaghettoni with cypress and turnips.
