Alex Marugán decided to launch his first gastronomic project at the Torrijos Market. With a goal of cooking food that tastes like you are eating at home, Alex works out of a stall that measures just three square meters and is filled with pots simmering with slowly cooked stews and other seasonal products. Among the specialties are a potato omelet stewed in green sauce, a vegetable stew with an emulsion of dried tomato and horseradish and a paella of noodles with skate and sobrassada. Order one of the best cheesecakes in Madrid for dessert.
