For the past 25 years, Joachim Wissler has blended New German and French haute cuisine at the magnificent Schloss Bensberg Hotel outside of Cologne, His tasting menus reinterpret classical flavors with modernist precision, and include dishes like calf heart with parmesan, artichokes, and a pine nut vinaigrette, crab with tandoori spices, masala cream and lemon couscous and pork stomach featuring crisp pork meat "Marrakech" with chicken peas. The wine list is exceptional, with German Rieslings, Bordeaux, and Burgundy grands crus alongside top bottles from international producers.
