Housed in a beautifully restored old stone house, the dining room opens onto a lush, meticulously maintained garden from which many of the restaurant’s herbs and vegetables are sourced. Carlos’ cuisine is rooted in La Rioja’s terroir; think lamb sweetbreads with garden leeks or beetroot tartare with sheep’s milk cheese, while Ignacio runs the service and curates one of Spain’s most impressive wine lists, featuring an encyclopedic selection of Riojas alongside rare international finds.
