At Victor’s Residenz-Hotel Schloss Berg, chef Christian Bau serves what he describes as French-Japanese cuisine. Among the tantalizing dishes in Bau’s repertoire are white asparagus with miso-butter with kombu, caviar and beurre blanc, scallops with black truffle, duck liver, textures of Jerusalem artichoke, katsuobushi and yellow wine and Miyazaki beef and eel grilled over binchotan with caviar, shiitake mushrooms, heart of palm & vinaigrette of dashi, ginger and seaweed. The wine list is extraordinary, with German Rieslings, Burgundy, and Bordeaux grands crus, alongside rare Champagnes and sake.
