His menus feature luxurious ingredients in dishes such as “Kleine Torte”, beef tenderloin tartare with N25 caviar, served on a crispy potato rösti with a dollop of crème fraiche, charcoal grilled turbot from the Vendée region served with lack morels, white asparagus, and a PX sherry beurre noisette sauce and venison with pistachio-filled polenta and a kumquat-juniper jus.
